| Using a large disposable aluminum roast pan (or
our Iron Works roasting pan as seen
at the bottom of our BBQ Santa page), place roast on Iron Works roasting screen, in center
of pan. Mix all liquid ingredients and garlic together and bast exterior of roast. Mix all
dry ingredients and season exterior of the bird. Using an Iron Works Commercial grill, pre-heat for indirect
cooking by firing the two outside burners (one on the left and one on the right, with the
center burners turned off). Pre-heat for 15 minutes with roll cover down. You will be
cooking at approximately 250-275 degrees and will require approximately 120 minutes to
cook. Outside temperatures and either shorted or extend this cooking time. Check for
degree of doneness at 60 and 90 minutes. This means of cooking will produce a very tender
and juicy roast with a deep dark exterior skin. Let sit for 20 minutes before carving and
garnish with fresh parsley.
