Roto Roasted Lemon and Orange Chicken

Ingredients:

  • 1 5-6 lbs. Chicken rinsed and dried
  • 1 Cup of extra virgin olive oil
  • 1 Tablespoon of minced garlic
  • 1 Tablespoon of soy sauce
  • 2 Tablespoon of Iron Works Chicken Mania herbal/spice seasons
  • 1 Cup of grated lemon or orange peel
  • 2 Orange or lemon wedged in 8ths
Using a large disposable aluminum roast pan, place chicken on Iron Works chicken roasting screen, in center of pan. An Iron Works chicken thrones is used, which will hold the chicken in an upright position. lochicken1.jpg (102960 bytes)
When using the Iron Works chicken throne, a combination of dry herbs, lemon and orange juices can be poured into the throne cavity for additional seasoning, during the cooking process. Mix all liquid ingredients and garlic together and bast exterior of chicken. Place lemon and /or orange wedges in the cavity of the chicken. Mix all dry ingredients and season exterior of the bird. Using an Iron Works Commercial grill, pre-heat for indirect cooking by firing the two outside burners (one on the left and one on the right, with the center burners turned off). Pre-heat for 15 minutes with roll cover down. You will be cooking at approximately 250-275 degrees and will require approximately 60 minutes to cook. Out side temperatures and either shorted or extend this cooking time. Check for degree of doneness at 30-45 minutes. lochicken3.jpg (72380 bytes)
This means of cooking will produce a very tender and juicy chicken with a deep dark exterior skin.When finished, remove the pan from the grill and elevate the bird (end wise), so that the juices from the inside of the body cavity will run out.
